Green Drink Style Lentil-Corn Curry

I have a confession- I have never made Indian food in my life. But this past weekend I was feeling experimental. I had some curry (in my pantry I had ambitiously bought about 9 months ago,) and after playing around with some other spices, came up with this awesome dish. It turned out to be one of the best meals I have made in a while and is somewhat kid-friendly. Husband and Toddler approved!

Lentil-Corn Curry

I have to start with a buzz-kill: if you currently have cancer, I DO NOT recommend this dish. The honey or sugar added, yogurt, extra Herbamare or salt, and the corn are not helpful in treating your cancer. If you have been in remission for a few years, I would eat this dish minimally, like me.

When I made this dish I did not measure every ingredient out, so please keep in mind that you may have to add a little extra of some of the spices to your liking as I erred on the minimal side. It took me a little over 30 minutes to make and used only 2 pieces of cookware.

You will need:

12-16 oz cooked brown lentils (about 1 1/2 cup dry with some left over)
1 – 10z bag frozen organic corn
1 Tbsp coconut oil
1/4 cup honey or 1/4-1/2 cup organic brown sugar (optional)
1/4-1/2 cup vegetable broth
2 large tomatoes chopped
1-2 tsp chile powder (to taste)
2 tsp Curry powder (to taste)
Herbamare to taste (I put in quite bit!)
1 tsp cumin
8 oz organic plain yogurt
wild rice

Directions:

In a large skillet put coconut oil and melt on medium heat. In another pan bring water to boil and prepare rice as directed. Add corn and saute in the coconut oil until unfrozen. Add cooked lentils and saute for 2 minutes. Add yogurt and all spices except sugar or honey. Add vegetable broth. Let simmer for 10 minutes on medium-high heat. Add tomatoes and stir in sugar or honey. Add Herbamare or sea salt to taste. Let simmer for 5 more minutes and then turn off heat.
Once rice is done cooking add 2 Tbsp of ghee (clarified butter) and Herbamare or sea salt to taste. Serve side-by side and enjoy!!!

A Note About Kid Appetites: My 22 month old daughter LOVED this dish! I’m talking- she did not say a word until her plate was cleared. It was pretty incredible. However, if your child winces at anything that isn’t familiar, you could “kid-ify” this dish by adding brown rice instead of wild or reducing the tomatoes. Adding more sugar or honey may make it more palatable, but of course I would have to not encourage the addition of it. But do what you need to do to make it your own. I hope it becomes a staple in your meal rotation!
