With warmer weather approaching, I have been put in a springy mood. Although I don’t drink fruit smoothies very often, this one is a delicious vacation from my green veggie smoothies (you can find my veggie smoothies under the “recipes” tab.) Yum!
Peachy Greenberry Smoothie
1 peach (or 1 cup frozen peaches)
10 (or 2 cups) strawberries
5-6 leaves of kale
3/4 c kefir or yogurt (you can also substitute a natural protein powder)
1 1/2 cups ice
Blend in a Vitamix or blender and ENJOY!
Nutritional Benefits:
peach- high in Vitamin A and potassium
strawberries- Very high in Vitamin C along with hosts of other nutrients. Phytonutrients that help prevent cancer, antioxidants to fight inflammation and even stop cancer cell reproduction.
kale- high in dietary fiber, Vitamin A, quercetin (an anti-cancer plant compound), Vitamin C, folic acid, calcium, and many other vitamins and minerals!
kefir/yogurt- probiotics (healthy bacteria), protein, rich in dairy-based calcium, Vitamin B, Vitamin K.
hey cortney! i discovered your blog through your interview with chris (chrisbeatcancer.com) & really enjoy it! i drink a smoothie every morning & have heard of adding raw greens…such as kale or spinach. i feel like i should be doing it, but am hesitant. can you tell me what it does to the taste & texture of the drink? thanks!
